Can the SUN-50K-G03 be used as a bi-directional inverter meaning when used as a "UPS" that any excess power generated by the PV will be exported to the grid?

The inverter is used as a UPS, once the battery reaches 100% SOC it will export the excess to the grid unless you have set it to zero export. In this case when the battery is full (or almost full) and zero export set, the inverter MPPT will throttle back the power generated from the PV. As Flipper describes you should be able to see this behaviour by either looking at the Power Flow on the App or Portal or on the LCD console.
