Modulating battery charge

I've had an 8kW Sunsynk setup for just over a year now, with an iboost for hot water and two 4.8kW batteries. It's powered by 18 panels on the south and west roofs, and I have seen a peak of just over 7kW. I'm extremely happy. It's a very well thought out system. Congratulations on a great inverter and controllers. However, once I have charged both batteries and warmed up 200L of water, the system sends power back to my supplier (Octopus) on good sunny days. We then run out of power overnight when actually, with a third battery, we could run the entire 24h no problem. The logic at present is to charge batteries and when full, heat water. Is there a way my installer could fit a third battery that only gets charged after the water has been heated so that we ensure we get enough water first?

Surely if you get a third battery you could top up the hot water heat from the battery? it would still be solar power just time shifted.
