How best to get more peak power? 5kw ecco currently.

I have a 5kw sunsynk inverter and 2x ip65 (5.1kwh)batteries, but looking to up the output to over 7kw.
Whats the best way todo this?
I see either swap 5kw for 8kw.
Or get additional 5kw and parallel?
I wondered about adding a 3.6kw, but to parallel they need to be the same size.
Not sure if there is another way to wire in a 3.6 to make up the difference from the same battery set?

Ye really good point there re cost, I was focusing more on off grid. But it's probably not worth it.
Plus our extra load is things like, oven x2, 3kw kettle, dishwasher, washing machine, dryer, toaster.
So all point of use stuff, so to spread load would require discipline, not sure my family have enough...
