is it best to have a system where the batteries discharge say only 20%/30% with a big battery or where the batteries discharge fully with a smaller battery?

I think you have to expand your question so you are clear about best for what? I was trying to optimize for pay back time and I live in the UK with cheep(er) overnight electricity. So I sized my battery so it could provide all my days energy (outside of the cheep time & excluding my car charging) with 80% of my battery capacity. Some days without sun I do not have quite enough. Other days with plenty of sun I have more than I need. I don't mind that I fully cycle the battery each day as my Eve Cells are rated at 6000 cycles so will likely die of old age before I run out of charge cycles. If you want something different, like to to extend the life of batteries with a different rating, to ensure you can survive an extended power outage or you generate enough solar that you want to keep it from sunny days and use it on cloudy days you may size differently.
For the record I have 280 Ah of Eve cells (16x 260 Ah cells) in a home built battery. I did have 2x 5000C Palon and they were not enough.
